CHICKEN RESHMI KEBABS

(A popular sub-continental dish)

Chicken Reshmi Kebab is a popular sub-continental dish known for its juicy, melt-in-your-mouth texture and rich aromatic flavors. These kebabs are made from tender boneless chicken/beef that is marinated in a creamy mixture of yogurt, cream and spices and then grilled to perfection for a delicious and flavorful dish.

 


Ingredients:

- 2 green chilies, chopped

- 1 teaspoon garam masala powder  

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- Salt to taste

- Oil for basting

 

For Garnish:

- Finely chopped coriander leaves

- Lemon wedges

- Onion rings

 

Instructions:

- Take a large mixing bowl, yogurt, ginger-garlic paste, lemon juice, cream (optional), cashew nut paste, gram flour (essential for thickness) , green chilies (as per spice), garam masala powder (link given below) , cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well to form a evenly marinade.

- Add the chicken or beef mince (keema) to the marinade and mix them uniformly. Cover the bowl and marinate the chicken for at least 2 hours (preferably in refrigerator).

- Pre-heat your grill ( burn coal until the fire goes down ) or oven to medium-high heat.

- Thread the marinated chicken or beef mince ( keema) onto iron skewers.

- Brush the grill grates with oil to prevent sticking. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a golden brown color on all sides.

- Once cooked, remove the skewers from the grill or oven and place them on a serving platter.

- Garnish the chicken reshmi kebabs with finely chopped coriander leaves and serve hot with lemon wedges and onion rings on the side.

- Serve the Reshmi kebabs with delicious mint-yogurt chutney (sauce).

For Mint Chutney (Sauce):

-        1 cup fresh mint leaves, washed and chopped

-        1/2 cup fresh coriander leaves, washed and chopped

-        1-2 green chilies, chopped (adjust to taste)

-        Add them into Half kg Yogurt
